Mustard Seeds (Rai):
Though it is primarily an oilseed but its peculiar pungent characteristic make it a favored spice by many cuisines. Grown during winter season and harvested after spring, Mustard seeds are little round seeds found in a variety of mustard plants. The seeds range in size from 1 to 2 millimeters (0.039 to 0.079 in) in diameter and can be yellowish-white to black. They are a common spice in many regional dishes and can be derived from one of three plants: black mustard (Brassica nigra), brown mustard (B. juncea), or white mustard (Brassica juncea) (Sinapis Alba).
Mustard seeds are used as a spice. The seeds are usually roasted until they pop. And mustard splits/powder is used for making pickles. The leaves can also be stir-fried and consumed as a vegetable.

Mustard seeds are high in oil and protein. The seed contains up to 35-46% oil, depending upon variety and region, while the total seed meal has 43.6% protein.
